Spring?

Hmm. Not so much. I've put my winter coat in storage twice now only to pull it out again. Ditto for the hat and gloves. I'm craving ramps, garlic scapes and asparagus...but in a hot preparation, please!

This recipe for a spring vegetable ramen fits the bill. Not only does it call for shiitake mushrooms (YES GARY THE MUSHROOM MAN IS BACK THIS WEEKEND) but those orange, soft-boiled yolks scream warmth and sunshine!

Spring in a bowl will do - until we can enjoy it properly in a salad.
